Digestive or Rich Tea Biscuits – Gluten and Dairy free

Rich Tea style GF Biscuits

I love a digestive biscuit and really wanted to make some that didn’t break anyone’s teeth as gluten free recipes often produce dog biscuits instead of ‘Melt in the mouth’ kind.

Warning! These biscuits are very moreish so don’t be surprised if they disappear within minutes of making. It’s pretty much the same recipe for both types of biscuit but in different proportions.

If you don’t fancy rolling and cutting over and over again. Roll out the dough into a large circle on top of Greaseproof paper, use a round hair brush (new and sterilised) to make the holes and cut into wedge shapes similar to a shortcake or pizza

Ingredients

  • 3 oz Wholegrain Oat flour
  • 5 oz Gluten free flour Dove's GF Bread flour doesn't contain Cornflour
  • 2 tsp Baking powder Gluten free
  • 1 tsp Salt
  • 3 oz Sugar I use Billingtons Natural cane sugar
  • 4 oz Dairy Free Spread I use 'Pure' Sunflower spread
  • 20 mls Dairy free cream alternative I use Provamel Organic Bio Cuisine Soya

Ingredient changes for Rich Tea style biscuits

  • 2 oz Wholegrain Oat Flour
  • 6 oz Gluten free plain flour

Instructions

  • Put the flours, Spread, Sugar, Salt and Baking powder into a mixing bowl and rub in or stir with a fork until it resembles breadcrumbs
  • Add half the Soya Cream and mix well, if needed, add a bit more until the mixture is a nice firm dough
  • Roll out on a well floured board until about 1/8 inch thick.
  • Either prick the dough all over with a forkl, or, do as I do and roll a clean hairbrush over the dough (like a rolling pin) to make multiple holes all at once.
  • Cut out round biscuits, or whatever shapes you like. For speed you can roll it out on to greaseproof paper into a circle, then cut it into sections like a pizza
  • If you have a rack with very fine mesh, you can put your biscuits directly on to it, so you get a pattern like professional biscuits. Or, just put onto greaseproof paper laid on a baking tray.
  • Put in your preheated oven at 180°C for about 15 minutes but check before then as then can suddenly start to burn if you're not careful

Rich Tea Biscuits

  • Do exactly as above for the digestive biscuit version, just substituting the different flour quantities. These biscuits will be crunchier due to less Oatmeal.
