Cotswold round fruit scone – Gluten and Dairy free
A lovely fruity scone round 7 inches diameter.

Ingredients
- 4 oz Tapioca flour I use buywholefoodsonline.co.uk tapioca flour
- 4 oz Gluten free plain flour I use Dove’s gluten free bread flour
- 1 tbsp Baking powder – gluten free I use waitrose own make
- 50 g Dairy free margarine Pure dairy free spread
- 1 Egg – beaten
- 150 ml Milk mixture – dairy free You can use any dairy free milk substitute
- 3 oz Mixed dried fruit
Instructions
- Preheat the oven to 200°CMix together all the dry ingredients except fruitAdd the dairy free spread and rub in until it resembles breadcrumbsStir in the fruitAdd most of the egg to the mixture but leave a little for glazingGradually add the dairy free milk until it forms a nice pliable dough.Form into a circle measuring approx 7 inches diameter and score the topPlace on a greased baking tray and bake in the oven for approximately 25 minutes.If the base of the scone seems a little underdone, carefully turn it over and put back in the oven for another 5 minutes
