Ingredient changes for Rich Tea style biscuits
2oz Wholegrain Oat Flour
6ozGluten free plain flour
Instructions
Put the flours, Spread, Sugar, Salt and Baking powder into a mixing bowl and rub in or stir with a fork until it resembles breadcrumbs
Add half the Soya Cream and mix well, if needed, add a bit more until the mixture is a nice firm dough
Roll out on a well floured board until about 1/8 inch thick.
Either prick the dough all over with a forkl, or, do as I do and roll a clean hairbrush over the dough (like a rolling pin) to make multiple holes all at once.
Cut out round biscuits, or whatever shapes you like. For speed you can roll it out on to greaseproof paper into a circle, then cut it into sections like a pizza
If you have a rack with very fine mesh, you can put your biscuits directly on to it, so you get a pattern like professional biscuits. Or, just put onto greaseproof paper laid on a baking tray.
Put in your preheated oven at 180°C for about 15 minutes but check before then as then can suddenly start to burn if you're not careful
Rich Tea Biscuits
Do exactly as above for the digestive biscuit version, just substituting the different flour quantities. These biscuits will be crunchier due to less Oatmeal.
